Recipe Ingredients:

1 lb wild mushroom mix, cleaned                            

8 eggs, beaten             

Salt and white pepper

1 tbsp parsley, chopped

12 oz (about ¾ cup) crumbled goat cheese

4 slices whole-wheat toast

Preparation:

Sauté mushrooms until soft in a non-stick pan over medium heat, adding salt and pepper as needed. Add eggs and cook until scramble is soft; add parsley.                                    
                                   
Place eggs on serving dish and top with goat cheese. Serve with toast on side.
